Aperitif: Emile's Grand Cuvee- produced from a blend of Chenin Blanc & French Colombard grapes.
1st Course: Insalata mista with fresh beets, organic baby greens, goat cheese & a lemon vinaigrette. Served with a 2010 Rosatello, Estate grown.
2nd Course: Dungeness crab pancake served with an emulsified cold pressed olive oil. Served with a 2009 Private Reserve Chardonnay, Monterey County.
3rd Course: Fresh orecchiette pasta with caponata & pecorino Toscano cheese. Served with 2007 Sangiovese, central California coast.
4th Course: Braised short ribs with a wild mushroom Demi glaze. Served with a 2007 Petite Sirah, Santa Clara Valley.
5th Course: Classic Zabaione served with organic local berries & a vanilla biscotti. Served with a private reserve Eredita Port.
